Coconut cookies AIP friendly




200 g ( 7 oz) shredded coconut - I took Edward&sons because it is USDA Organic and Gluten Free
4 tbs coconut oil - I used Jarrow Formulas, Organic Extra Virgin Coconut Oil, 32 fl oz (946 g)
4 tbs coconut flour  - I used Nutiva, Organic Coconut Flour, Gluten-Free, 1 lb (454 g)
50 g coconut sugar I took Wholesome sweeteners
1 tbs gelatin  Z!NT, Beef Gelatin, Pure Protein, 10 oz (283 g) -
Zint is produced in a Gelatin/Collagen only plant and is wheat-free, gluten-free, dairy-free, peanut-free, tree nut-free  and soy-free

Combine 1  Tbsp. of Zint Gelatin with 1/4 cup of room temperature liquid, mix well, and add 1/4 hot water and mix utill dissolved completely


Mix all ingredients.


Optionally you can add to h smashed banana or some finely chopped fruit ( I tried with cherry  and dried plums -it was very tasty)

 Bake for 15 min
added in some cabob powder/
